									<p>Fr&uuml;her waren Fermente ein ganz wichtiger Teil in der Ern&auml;hrung. Warum? Weil es einfach nicht viele M&ouml;glichkeiten gab, Dinge haltbar zu machen. Heute nutzen wir den K&uuml;hl- und Gefrierschrank, um unsere Lebensmittel zu lagern und haltbarer zu machen. Fr&uuml;her ging das nicht und damit die Sachen wirklich stabil und lange haltbar wurden, war ein wichtiger Teil das Fermentieren von Nahrungsmitteln. Und so geh&ouml;rten Fermente mit zur Ern&auml;hrung. Viele Lebensmittel wurden durch das Fermentieren auch vertr&auml;glich gemacht, wie zum Beispiel Quinoa oder wie Mais in der traditionellen Herstellung von Tortilla.</p>								</div>

									<p>Die Laktobazillen und Bifidobakterien spielen eine ganz wichtige Rolle in der Schutzflora des Darms. Sie sind wichtig, damit bestimmte Stoffe ad&auml;quat aufgenommen werden k&ouml;nnen. Unser Darm sollte einen bestimmten pH-Wert haben. Idealerweise liegt der bei 6. Alles dar&uuml;ber hinaus &ouml;ffnet die T&uuml;r f&uuml;r F&auml;ulnisbakterien und insgesamt f&uuml;r F&auml;ulnis &ndash; das ist dann problematisch.</p>								</div>

									<p>Man braucht dieses saure Milieu, um zum Beispiel Magnesium zu resorbieren. Bei meinen Patienten haben fast alle Magnesiummangel. Das hat zum einen mit unserer Ern&auml;hrung zu tun und zum anderen liegt es daran, dass fast allen die Laktobazillen fehlen. Der pH-Wert ist oft viel zu hoch. Und die F&auml;kalien- und F&auml;ulnisflora im Darm sind ebenfalls viel zu hoch. Und so kann das Magnesium nicht in die Blut- oder Lymphbahn aufgenommen werden.</p>								</div>

									<p>Als erstes halbiert man den Chinakohl und entfernt den Strunk. Dann gibt man den Kohl in eine Sch&uuml;ssel und bestreut ihn mit Salz. Pro Kilo Chinakohl braucht man 100 Gramm Salz. Jetzt bedeckt man alles mit Wasser und l&auml;sst ihn &uuml;ber Nacht stehen (mindestens sechs Stunden). Achte darauf, dass der Chinakohl komplett mit Wasser bedeckt bleibt. Ich nutze zum Beschweren einfach einen Teller. Am n&auml;chsten Morgen gie&szlig;t man das Wasser ab und sp&uuml;lt den Kohl ein bisschen mit klarem Wasser. Jetzt darf probiert werden! Ich mag es gerne salzig. Wenn du es nicht so gerne sehr salzig magst, dann wasche den Kohl ein paar Mal mehr mit klarem Wasser.</p>								</div>

									<p>Den Lauch grob hacken. Ich nutze meinen Thermomix daf&uuml;r. Wenn du keinen hast, kannst du auch wunderbar mit einem Stabmixer arbeiten. Dann kommt etwas kleingeschnittener Rettich und Knoblauch dazu. Knoblauch ist lecker und gesund. Magst du ihn also nicht, kannst du ihn auch weglassen. Jetzt fehlt nur noch ein bisschen Ingwer. Ich nutze Bio-Ingwer und lasse die Schale einfach dran. Alles im Thermomix oder mit dem Stabmixer zu einer Paste verarbeiten.</p><p>F&uuml;r ein gutes Kimchi ben&ouml;tigen wir noch Gochugaru, das ist koreanischer Chili. Ich verwende koreanisches Chilipulver. Wer es gerne scharf mag, nimmt f&uuml;r ein Kilo Chinakohl ca. zwei Essl&ouml;ffel Gochugaru. Wenn du es gerne etwas milder haben m&ouml;chtest, dann empfehle ich dir einen Essl&ouml;ffel oder sogar ein bisschen weniger. Die Koreaner nehmen mindestens vier Essl&ouml;ffel.</p>								</div>

									<p>Fischsauce darf nat&uuml;rlich auch nicht fehlen und ein halber Essl&ouml;ffel Zucker. Wer Zucker auf gar keinen Fall benutzen m&ouml;chte, der kann alternativ eine Naschibirne kleinraspeln. Wichtig zu wissen ist, dass der Zucker das Substrat f&uuml;r das Ferment ist. Das hei&szlig;t, die Laktobazillen, die wir z&uuml;chten m&ouml;chten, die fressen den Zucker und verdauen ihn. 									<p>Jetzt vermengst du den Chinakohl mit der Paste und stopfst alles in ein gro&szlig;es Einwegglas. Ich empfehle dir, dazu Handschuhe anzuziehen, denn die Paste ist durch den Chili sehr scharf. Und wenn du dir im Nachhinein mit den Fingern die Augen reibst, wird es extrem brennen.</p><p>Das Glas muss mit einem Dichtungsring verschlossen werden &ndash; ohne geht es nicht. Es darf keine Luft reinkommen. Es darf nur Luft &uuml;ber den Dichtungsring raus. Habst du viel Paste &uuml;brig, um den Kohl abzudecken, dann musst du nichts zum Beschweren reinlegen. Die Laktobazillen fressen relativ z&uuml;gig die Luft raus. Und dadurch ist es dann luftdicht verschlossen, vorausgesetzt es hat einen neuen Dichtungsring und kann dann vor sich hin fermentieren. Am besten beginnt man das Fermentieren bei Raumtemperatur (20 bis 22 Grad). Wenn alles anf&auml;ngt zu blubbern, kannst du es in einen k&auml;lteren Raum stellen.</p>								</div>

									<p>Nicht jeder mag Fermentessen &ndash; warum also nicht einfach ein Probiotikum nehmen? Ein Probiotikum sein ganzes Leben lang zu nehmen, ist nicht gerade g&uuml;nstig. Und zweitens bekommt man &uuml;ber das Probiotikum nur die Keime, f&uuml;r die du sozusagen bezahlt hast &ndash; also die, die in dem Probiotikum drin sind. Das sind meistens ca. 12 bis 16. In einem selbstgemachten Ferment haben wir 50 bis 60 verschiedene Keime und auch alles benefit&auml;re Keime. Das bekommt man mit einem gekauften Probiotikum nicht hin. Man kann die nicht isolieren. Wir bekommen also hier eine Diversit&auml;t, die man mit einem gekauften, fertigen Probiotikum nie hinbekommt.</p><p>Kimchi enth&auml;lt zum Beispiel den Laktobazillus Kimchikus. Das ist ein Laktobazillus, welcher nur in Kimchi w&auml;chst. Und der hat eine ganz spezielle, andere Bakterien verdr&auml;ngende Wirkung. Die Laktobazillen verdr&auml;ngen zum Beispiel E.coli (Escherichia coli) &Uuml;berbesiedlung, verhindern, dass sich Candida ansiedeln kann und sind insgesamt super hilfreich.</p>								</div>

									<p>Absolut! Der Mann meiner Schwester hat ein Jahr lang in Korea gelebt und hat sich so an Kimchi gew&ouml;hnt und isst es heute noch super gerne. Meine Schwester fand das am Anfang super eklig. Gerade wenn ein Glas ge&ouml;ffnet wurde, kam immer ein &bdquo;B&auml;&auml;h &hellip;&ldquo; von ihr. Inzwischen isst sie es selber total gerne und kauft es beim Koreaner. Man kann sich also an Fermente gew&ouml;hnen. Am Anfang findet man es oft ein bisschen komisch. Das ist wie mit Stinkek&auml;se. Gerade Kinder m&ouml;gen den am Anfang erst einmal nicht. Oder Oliven &ndash; Oliven schmecken am Anfang eigentlich fast niemandem. Man muss sie einfach ein paar Mal essen und dann entdeckt man nach und nach den Geschmack f&uuml;r sich und lernt ihn lieben. Und das ist bei fermentiertem Gem&uuml;se genauso.</p><p>Probiere ein bisschen aus! Man kann mit etwas Mildem beginnen &ndash; fermentierten Mohrr&uuml;ben zum Beispiel. Das ist ein sehr mildes Ferment und sehr lecker. Relativ mild ist auch Sauerkraut. Vor allen Dingen, wenn man es nicht ewig fermentiert. Man kann hier verschiedene Sachen ausprobieren. Ich mag zum Beispiel super gerne Sauerkraut, was mit Dill fermentiert wurde. Das hat einen frischen Geschmack. Oder ich mag auch gerne Sauerkraut mit Chili und Curry. Das finde ich auch total gut. Deiner Kreativit&auml;t sind da keine Grenzen gesetzt.</p><p>F&uuml;r Einsteiger, also wenn du etwas f&uuml;r deine Laktobazillen und Bifidoflora tun willst und du willst es nicht gleich so heftig haben &ndash; wie zum Beispiel mit einem Gem&uuml;seferment -, ist Kefir eine ganz gute Geschichte. Wer auf Milchprodukte verzichten m&ouml;chte, nimmt einfach Kokosmilch. F&uuml;r die Herstellung ben&ouml;tigst du dann Kefirknollen. Diese kannst du einfach bei Ferment bestellen. Die Knollen werden dann abgewaschen, Milch drauf und warten. Drei Tage sp&auml;ter hat man dann Kefir. Einfacher geht es nicht.</p>								</div>

									<p>Baek Kimchi wird auch als &bdquo;wei&szlig;es Kimchi&ldquo; bezeichnet. Dieses Kimchi ist AIP-konform und &auml;hnlich einfach in der Herstellung wie das normale. Die Vorbereitung des Chinakohls ist gleich der Herstellung des normalen Kimchis und kannst du weiter oben nachlesen.</p><p>Beim Baek Kimchi werden die Zutaten nicht so fein geschnitten wie beim normalen. Wir beginnen wieder mit dem Lauch und schneiden diesen in grobe St&uuml;cke. Als n&auml;chstes kommt der Ingwer &ndash; ganz viel Ingwer. Und hier gibt es einen weiteren Unterschied: Jetzt schneide ich die Schale ab, auch wenn es Bio-Ingwer ist. Die Schale braucht bei der Fermentierung einfach l&auml;nger, wenn man die nicht ganz fein verarbeitet.</p><p>Da wir beim Baek Kimchi keinen Chili, keine Fischso&szlig;e und deutlich weniger Knoblauch verwenden, kommt viel Ingwer als Sch&auml;rfeersatz hinein. Wir verwenden in dieser AIP-Variante auch keinen Zucker. Es fehlt also der Fermentationsbeschleuniger. Und dadurch braucht das Kimchi jetzt auch deutlich l&auml;nger, bis es fermentiert. W&auml;hrend man das normale Kimchi bereits nach drei bis f&uuml;nf Tagen essen kann, braucht dieses ca. zwei Wochen, bis die Laktobazillen in Gang kommen.</p><p>Der Ingwer wird direkt zum Chinakohl in die Sch&uuml;ssel gerieben. Etwas Knoblauch kleinschneiden und ebenfalls dazugeben. Die Zutaten gr&uuml;ndlich vermischen und in ein Glas stopfen. Jetzt wird alles mit Lake aufgef&uuml;llt. F&uuml;r die Lake vermischst du einen halben Liter Wasser mit 50 Gramm Salz. Zum Schluss wieder alles luftdicht verschlie&szlig;en und ziehen lassen.</p>								</div>

									<p>Knoblauch hat auch von sich aus schon super gute Candida-verdr&auml;ngende Eigenschaften, also hoch antimikrobiell, verdr&auml;ngt die ganzen B&ouml;sen. Die Laktobazillen haben nichts gegen Knoblauch, die fermentieren gerne auch den Knoblauch. Man kann zum Beispiel auch Knoblauch einfach in Waldhonig einlegen und damit ein Ferment schaffen, was dann voll lecker als W&uuml;rzerg&auml;nzung f&uuml;r alles M&ouml;gliche genutzt werden kann.</p>								</div>

									<p>Die Zeiten, bis etwas anf&auml;ngt zu fermentieren, sind sehr unterschiedlich und abh&auml;ngig von der Zutat, die fermentiert werden soll. Nehmen wir zum Beispiel Rote Bete. Die kommt deutlich schneller in die G&auml;nge und f&auml;ngt ganz schnell an blubbeln. Wenn man Sauerkraut fermentieren will, dann dauert das so gute sechs bis acht Wochen, bis es schmeckt.&nbsp;</p><p>Man kann es daf&uuml;r aber auch sehr lange aufbewahren. Ich habe Sauerkraut nach zwei Jahren noch gegessen und es war noch immer lecker. Das h&auml;lt sich durch die Laktobazillen ewig. Sollte ein Ferment kippen, dann sieht man das daran, dass sich Hefen bilden. Es f&auml;ngt also an zu schimmeln. Aufgrund des extrem sauren Milieus ist das aber meistens nicht der Fall.</p>								</div>

									<p>Wichtig: Fermente haben immer sehr viel Histamin. Wer das nicht gewohnt ist und vielleicht tendenziell Histaminprobleme hat, sollte mit kleinen Mengen anfangen.
